Mart Seim bests his old Squat PR by 3kg and gets 353kg.
With only 3 weeks to go until the +105kg session at worlds I asked him how long before a competition he squats heavy. His answer:
I haven’t squatted over 320 in over 2 months, but today I was feeling good so I did 330/2 and 353/1. I think I won’t go over 320 anymore.

My question is how do these elite weightlifters squat with such speed, control, and upper chest. Am I just squatting too heavy?

…and of course ridiculous strength. But your reference to “upper chest” made me think you’re referring to the upright position of the torso, and this is more a function of leverages. This generally produces a squat that looks very easy through all successful reps until the lifter suddenly fails.

Yep! I’d like to add that weightlifters squat “chest up” because of high bar placement on the traps. If he were a powerlifter, he would have more forward lean (although still more upright than the average Joe due to his Reza-like femurs 😀 ) Most weightlifter’s squats are controlled and fast because it’s only an assistance exercise and generally not pushed as hard as powerlifters need to do.
